General manager of Il Forno, Andre Tedesco, is an expert when it comes to food and drink.
The 43-year-old has travelled the world to work in restaurants, including his time spent as headwaiter in a casino in Monte Carlo where Dame Shirley Bassey was one of his regular customers.
When he isn’t busy at his Duke Street work, you will probably find him in his own kitchen in Upton creating one of his favourite dishes.
The father of three said: “I find nothing more enjoyable than cooking at my home in Upton for my closest friends and family. I love cooking with both fish and meat and it is very important to have the right bottle of wine to wash it all down with.”
Andre’s family favourite is Steak with pepper sauce.
Ingredients
Steak (can be sirloin, fillet or rib-eye)
A splash of Brandy
A splash of white wine
Meat stock
100ml cream
Generous amount of peppercorns
Pinch of salt
A tablespoon of Dijon mustard
** Served with sautéed potatoes and vegetables of your choice**
Method
Cook the steak to your liking and then add a splash of brandy when it is done. Take the steak out of the pan and add a bit of white wine. Add some meat stock, 100mls of cream, a generous amount of black peppercorns, a pinch of salt and a tablespoon of Dijon mustard. Then put the steak back into the pan for a few seconds and serve.
